Eating Healthy In The New Year

New Year = New Year’s Resolutions? For many of us, we have made a commitment to eating healthy in 2023! Growing your own vegetables, herbs, lettuces and some fruits are easy with Lettuce Grow. With 2023 in full swing, I thought I’d share a wonderful hydroponic growing system that I have been using for about 9 months now.

First of all, I LOVE being outdoors in Colorado, enjoying nature and I have 5 acres to garden with! However, what I don’t like are the creepy crawly things that can get into your gardens. So, I found the perfect solution – Lettuce Grow Farmstands.

I have never tasted any lettuce, tomato, zucchini, herbs or fruit so fresh, seriously. If I have your attention and your interested in the Lettuce Grow, here’s what you need to do:

order your Farmstand at www.lettucegrow.com and decide the size that you’d like. I ordered the 24 seedling Farmstand but you can always start smaller and add another tier later. Order your seedlings – fruits, vegetables, lettuce or edible flowers & once you set it up, it’s self-watering and you fertilize once a week. Their website will give you suggestions as to what to grow for the season. Most seedlings will be ready to harvest 3- 6 weeks after planting.

Once your order arrives, you just need to put your Farmstand together, fill it with water and place the seedlings as directed (i.e., back of farmstand, row 1, etc.). You can also download the app to remind you of what you planted and when you need to fertilize.

I keep the Lettuce Grow on my upper patio deck during the spring, summer and some of fall. The water cycles are easy to set up based on your climate and harvest you intend to grow. Since the farmstand is outside of my bedroom, I keep my doors open and it is doubles as a soothing water feature. During the cold months, you can add grow lights to it (which Lettuce Grow sells), bring it indoors and continue growing produce year round. My goal for the winter was to buy the grow lights and continue growing indoors; but, the holidays got away from me and hence I haven’t yet tried it during the winter indoors.

When feeding my family, I want as clean and as fresh produce as possible, without chemicals and I have discovered that with Lettuce Grow. Not only is it functional, I believe it’s truly an art statement when everything is planted and honestly if I can grow herbs, vegetables, lettuces and fruit so can you.

Here’s a yummy recipe from Lettuce Grow recipes that I think you’ll love!

BLTA Salad

Ingredients

1/4 cup sour cream

3/4 cup buttermilk

1 Tbsp garlic, minced

1/3 cup chives, finely chopped

1 tsp worcestershire sauce

1/4 tsp salt and pepper

2 cups day old sourdough bread

1 Tbsp olive oil

pinch salt and pepper

1 cup bacon pieces (4 – 5 slices)

1 head butter lettuce

1 cup cherry tomatoes

1/2 avocado, sliced

Step 1

Put sour cream, buttermilk, garlic, chives, worcestershire, 1/4 tsp of both salt and pepper into a bowl and mix until well combined.

Step 2

Heat oven to 425 degrees F. Cut bread into 1-inch cubes, toss with olive oil, and a pinch of both salt and pepper. Lay onto a lined baking sheet and bake for 8-12 minutes until bread is toasted. Take out of the oven, set aside to cool.

Step 3

Cut bacon slices into 1-inch pieces. Heat cast iron to medium/high heat and add the bacon. Cook for 6-8 minutes until bacon is browned and crispy. Take off heat and lay onto a paper towel to absorb excess grease.

Step 4

Cut butter lettuce into bite-size pieces and distribute amongst 2 plates.

Step 5

Slice cherry tomatoes in half and quarters. Sprinkle over the two plates of butter lettuce; croutons, bacon, cherry tomatoes, avocado slices, and drizzle 2 tbsp of the Cream Herb Garlic Dressing over the top of each salad.

Step 6

Enjoy immediately!
