
This week’s Sparks of Joy #28 was found in the kitchen. My daughter, Rachel’s birthday, was on Monday and Sunday morning the Family gathered at her house for morning tea to celebrate. As regular readers will know, I Love to make special birthday cakes, (especially for my grandchildren), and I had decided to make her favourite – an ice cream cake with her favourite chocolate treat – Lindt balls. I’d had a brilliant idea (or so I thought): a Lindt ball ice cream cake. I had all the ingredients and was about to start when Mike put his two cents worth in and suggested I try something else. A friend recently gave me an ice cream maker she hadn’t used and I’ve been experimenting trying to make healthy ice cream options for Mike. Whilst it tastes good, I still haven’t quite perfected it and he pointed this out, After overcoming my pride, I agreed and went to Plan B – a baked cheesecake.
