In this episode, Carolyn opens up about her deeply personal
journey with Celiac disease. Diagnosed in 2012 after months of severe and
baffling health issues, she was forced to completely overhaul her Diet. But as a lifelong cookie lover, she quickly discovered a major problem: the gluten free options on the market were dry, crumbly, and frankly, disappointing. After one particularly bad experience during the holidays, she had an epiphany—everyone deserves a cookie that actually tastes good!
That realization sparked a mission. Carolyn left her demanding career in Finance, turned her apartment into a test kitchen, and spent months mastering the complex science of gluten free baking. She explains
to us the hidden sources of gluten in our everyday food and the incredible
challenges of baking without the “holy trinity” of wheat flour, eggs,
and butter.
Today, Mightylicious has grown from three flavors in
Manhattan to a nationwide brand, offering decadent, hand-crafted cookies, as well as gluten free mixes and flours so you can create your own sweet treats at home.
